Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large avocado, diced
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Combine in a large bowl the chickpeas, avocado, cucumber, red onion, and parsley.
  2. Whisk together in a small bowl the olive oil, lemon juice, honey, salt, black pepper, and garlic powder until well combined.
  3. Pour the dressing over the salad and gently toss to coat all ingredients evenly.
  4. Let the salad sit for 10 minutes to allow the flavors to meld.
  5. Serve chilled and enjoy.

Notes

For the best taste, use ripe avocados; this will enhance creaminess. Adjust seasoning to taste.
