Chicken Taquitos

Delicious crispy taquitos filled with seasoned chicken and cheese, perfect for any gathering or cozy night in.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • 8 small corn tortillas
  • Oil for frying or cooking spray for baking
  • Shredded lettuce
  • Sour cream, salsa, or other desired toppings

Instructions

  1. Preheat your oven to 425°F (220°C) if baking.
  2. Combine in a bowl the shredded chicken, cheese, and taco seasoning.
  3. Soften the corn tortillas in a dry skillet or microwave.
  4. Place a spoonful of the chicken mixture onto each tortilla, roll them tightly, and secure with toothpicks if needed.
  5. If baking, place the taquitos on a baking sheet and spray with cooking spray. If frying, heat oil in a frying pan.
  6. Bake for 15-20 minutes or fry until crispy and golden brown.
  7. Serve with shredded lettuce and toppings.

Notes

For extra crunch, bake longer or fry until golden brown. Store leftovers in an airtight container for up to 3 days.
