A delightful fusion of grilled chicken, balsamic dressing, and fresh strawberry salsa served on warm naan.

Ingredients

  • 1 cup diced strawberries
  • 1/4 cup diced red onion
  • 1/2 jalapeño pepper, diced
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 thin cut boneless, skinless chicken breasts
  • 3 cups mixed salad greens
  • 2 pieces naan
  • 1 cup shredded mozzarella cheese

Instructions

  1. Whisk together olive oil, balsamic vinegar, salt, and black pepper in a small bowl.
  2. Transfer 3 tablespoons of dressing to a zip-closure bag and add chicken breasts, seal, and marinate for 10 minutes.
  3. Preheat the grill to medium-high.
  4. Toss mixed greens with remaining dressing and set aside.
  5. Combine salsa ingredients in a small bowl and set aside.
  6. Grill chicken for 5-7 minutes per side until cooked through.
  7. Remove from grill, let rest for 3-5 minutes, and slice.
  8. Warm naan on the grill for 1 minute on each side, adding mozzarella cheese to the top when flipped.
  9. Top naan with half of the dressed greens, half of the sliced chicken, and fresh salsa.
  10. Slice and serve immediately.

Notes

For deeper flavor, marinate chicken for up to an hour or overnight. Use fresh, seasonal ingredients for best results.
