  • 1 cup long-grain rice, uncooked
  • 4 cups chicken broth
  • 1 cup milk
  • 1 onion, chopped
  • 2 cups frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, uncooked rice, chicken broth, milk, chopped onion, mixed vegetables, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Pour the mixture into a greased casserole dish.
  4. Cover with foil and bake for 45 minutes.
  5. Remove the foil, sprinkle cheese on top if using, and bake for an additional 15 minutes or until the rice is fully cooked and the mixture is bubbly.
  6. Let sit for a few minutes before serving.
