Delicious and healthy chicken nuggets packed with spinach and veggies, perfect for the whole family.

  • 1 lb ground chicken
  • 3/4 cup shredded zucchini (well-drained)
  • 1 cup shredded carrot
  • 1/2 cup finely chopped baby spinach
  • 1/4 tsp paprika
  • 3/4 tsp onion powder
  • 1/2 tbsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp nutritional yeast
  • 1 tbsp cornstarch
  • 1 1/2 tbsp extra light olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. In a large bowl, combine the ground chicken, shredded zucchini, shredded carrot, and chopped spinach.
  4. Sprinkle in the paprika, onion powder, Italian seasoning, garlic powder, salt, and black pepper.
  5. Add the nutritional yeast and cornstarch to the mixture.
  6. Drizzle the extra light olive oil over the ingredients in the bowl.
  7. Mix everything together until well combined. You can use your hands for a thorough mix!
  8. Scoop about 2 tablespoons of the mixture and form it into nugget shapes.
  9. Place the formed nuggets onto the prepared baking sheet, leaving space between each nugget.
  10. Bake in the oven for about 20-25 minutes, flipping halfway through, until golden brown.

Notes

To maintain crispiness, reheat in the oven at 350°F (175°C).
