  • 2 cups cooked noodles
  • 1 lb chicken breast, cubed
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine in a large baking dish cooked noodles, cubed chicken, chopped onion, minced garlic, grated ginger, coconut milk, curry powder, salt, and pepper.
  3. Mix well to ensure all ingredients are coated in the sauce.
  4. Cover the dish with foil and bake for 25-30 minutes, or until the chicken is cooked through.
  5. Remove the foil and bake for an additional 10 minutes to thicken the sauce.
  6. Serve hot, garnished with fresh cilantro.
