A fresh and vibrant salsa bursting with flavor, perfect for chips or as a taco topping.

Ingredients

  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine cherry tomatoes, garlic, onion, olive oil, salt, and black pepper in a bowl.
  3. Spread the mixture on a baking sheet in a single layer.
  4. Roast in the oven for 20-25 minutes until the tomatoes are soft and slightly caramelized.
  5. Remove from the oven and let cool slightly.
  6. Combine the roasted tomatoes with cilantro and lime juice in a mixing bowl.
  7. Stir well and serve with tortilla chips or as a topping for tacos.

Notes

Let the salsa rest for 30 minutes after mixing for a more intense flavor.
