A comforting and cheesy dish made with tender cauliflower and rich cheese sauce, perfect for any occasion.

  • 1 large head of cauliflower, broken into florets
  • 1 cup grated cheddar cheese
  • 2 cups milk
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil.
  3. Add the cauliflower florets and cook for about 5 minutes until just tender.
  4. Drain the cauliflower and set it aside.
  5. In a saucepan, melt the butter over medium heat.
  6. Stir in the flour and cook for about 1 minute, stirring constantly.
  7. Gradually whisk in the milk, ensuring there are no lumps.
  8. Continue cooking until the sauce thickens, about 5 minutes.
  9. Remove the saucepan from heat and stir in the grated cheddar cheese until melted.
  10. Season with salt and pepper to taste.
  11. Combine the cauliflower with the cheese sauce, mixing gently to coat the florets evenly.
  12. Pour the mixture into a baking dish and sprinkle breadcrumbs on top, if desired.
  13. Bake in the preheated oven for 20–25 minutes, until golden and bubbling.
  14. Allow to cool slightly before serving.

Notes

For an extra creamy texture, add a splash of cream to the cheese sauce before mixing with the cauliflower.
