A vibrant and refreshing salad made with fresh carrots, bell peppers, and cucumbers, tossed in a zesty dressing for a burst of flavor.

Ingredients

  • 3 large carrots, shaved or julienned
  • 1 red bell pepper, sliced thin
  • 1 cucumber, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup citrus juice (orange or lemon)
  • 2 tablespoons miso paste
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Combine in a large bowl shaved carrots, red bell pepper, cucumber, cilantro, and green onions.
  2. Whisk together in a separate bowl citrus juice, miso paste, ginger, sesame oil, salt, and pepper until smooth.
  3. Pour dressing over the salad and toss to coat evenly.
  4. Serve immediately or let it sit for about 10 minutes to enhance the flavors.

Notes

This salad can be prepared a few hours in advance; just add the dressing right before serving to keep it crisp.
