  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the oil, eggs, grated carrots, crushed pineapple, and vanilla.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving. Optional: Frost with cream cheese frosting if desired.
