A warm and hearty Cabbage Soup that fills the soul with comforting flavors and wholesome ingredients.

Ingredients

  • 1 head of cabbage, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a little olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until softened.
  2. Stir in the garlic and cook for an additional minute.
  3. Add the chopped cabbage, diced tomatoes, vegetable broth, thyme, and oregano.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the cabbage is tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

For a creamier soup, consider adding a splash of coconut milk or a dollop of sour cream just before serving.
