  • 1 butternut squash, peeled and cubed
  • 1 large onion, thinly sliced
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 1 cup grated cheese (like Gruyere or Parmesan)
  • 1 cup crushed buttery crackers
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a skillet over medium heat until golden brown. Add the sliced onions and cook until caramelized, about 15-20 minutes.
  3. Boil the cubed butternut squash in salted water until tender, then drain.
  4. Mash the cooked butternut squash in a large bowl and mix in the caramelized onions, heavy cream, grated cheese, salt, pepper, and nutmeg.
  5. Transfer the mixture to a greased casserole dish and top with crushed buttery crackers.
  6. Bake for 25-30 minutes, or until the top is golden and bubbly.
  7. Let it rest for a few minutes before serving.
