Delightful cookies inspired by the beloved Harry Potter drink, combining butterscotch chips and creamy butter for a sweet treat.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (for buttercream)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon butterscotch flavoring
  • 1 cup brown sugar (for caramel sauce)
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until smooth in a large bowl.
  3. Beat in the egg and vanilla until well combined.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually blend the dry ingredients into the wet mixture, then fold in the butterscotch chips.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until golden brown.
  8. Allow cooling completely.
  9. Beat butter until creamy for the buttercream, then gradually blend in powdered sugar and heavy cream, followed by butterscotch flavoring.
  10. Spread the buttercream on cooled cookies.
  11. Combine brown sugar, cream, butter, vanilla, and salt in a saucepan over medium heat to make the caramel sauce. Stir until thickened.
  12. Drizzle caramel sauce over frosted cookies before serving.
