A vibrant and zesty Buffalo Chickpea Pasta Salad that combines bold flavors with wholesome ingredients, perfect for summer picnics and gatherings.

Ingredients

  • 8 oz pasta (preferably rotini or penne)
  • 1 can chickpeas, drained and rinsed
  • 1 cup celery, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup carrot, grated
  • 1/2 cup Buffalo sauce
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Green onions or parsley for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and let cool.
  2. Combine in a large bowl the chickpeas, celery, red onion, and carrot.
  3. Mix in a smaller bowl together the Buffalo sauce, vegan mayonnaise, lemon juice, and season with salt and pepper.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over it.
  5. Toss everything together until well coated.
  6. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
  7. Garnish with green onions or parsley before serving.
