A flavorful dish featuring grilled chicken thighs infused with spicy Buffalo sauce and a hint of sweetness from honey.

  • 2 lbs Chicken Thighs (boneless, skinless)
  • 1/4 cup Buffalo Sauce
  • 2 tbsp Honey
  • 2 Garlic Cloves (minced)
  • 1/4 tsp Black Pepper
  • 1/4 tsp Salt
  • 1/2 tsp Parsley (dried)
  • 2 tbsp Chopped Green Onions (optional garnish)

Instructions

  1. Whisk together buffalo sauce, honey, and minced garlic in a small bowl.
  2. Season chicken thighs with salt, pepper, and parsley on all sides.
  3. Add 2 tablespoons of the honey buffalo sauce to the chicken thighs and toss to fully coat.
  4. Heat your grill to medium-low heat.
  5. Place the chicken thighs on the grill smooth side down once it’s hot.
  6. Turn the chicken thighs every 3-4 minutes.
  7. Continue this process until chicken juices run clear and the internal temperature is between 165-170 degrees.
  8. Baste the chicken thighs with the honey buffalo sauce during the last few turns.
  9. Serve your Honey Buffalo Chicken with a sprinkle of fresh chopped green onions and your favorite grilling side dishes!

For a diabetes-friendly version, consider using sugar alternatives like stevia or monk fruit instead of honey.
