A delightful twist on the classic Caesar salad, featuring roasted Brussels sprouts, crisp Romaine lettuce, and rich Parmesan cheese, topped with crunchy croutons.

Ingredients

  • 1 lb Brussels sprouts
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups chopped Romaine lettuce
  • 1/2 cup Caesar dressing
  • 1/2 cup shaved Parmesan cheese
  • 1 cup croutons
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the Brussels sprouts and cut them in half.
  3. Toss the Brussels sprouts with olive oil, salt, and pepper, and spread them on a baking sheet.
  4. Roast for 20-25 minutes or until golden brown and tender.
  5. In a large bowl, combine the chopped romaine lettuce, roasted Brussels sprouts, and Caesar dressing.
  6. Toss gently to coat the greens.
  7. Top with shaved Parmesan cheese, croutons, and a squeeze of lemon juice.
  8. Serve immediately.
