A vibrant salad combining fresh broccoli, crispy bacon, and a creamy dressing for a delightful experience.

  • 5 cups fresh broccoli florets, cut small
  • 8 slices of thick bacon, cooked until crispy and crumbled
  • 1 cup shredded sharp cheddar cheese
  • ½ cup red onion, finely diced
  • ½ cup dried cranberries (or raisins)
  • ⅓ cup sunflower seeds (roasted and salted)
  • ¾ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1½ tablespoons honey
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook the bacon until crispy and let it cool on paper towels. Crumble or cut into small pieces and set aside.
  2. Cut the broccoli into bite-sized pieces, wash, and dry thoroughly.
  3. Combine in a large bowl broccoli, bacon, cheddar cheese, red onion, cranberries, and sunflower seeds.
  4. Whisk together in a separate small bowl mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  5. Pour the dressing over the broccoli mixture and toss until everything is coated.
  6. Cover and refrigerate for at least 30 minutes to an hour before serving.
  7. Taste and adjust seasoning with salt and pepper if needed.

Notes

For a healthier version, consider using sugar substitutes like stevia or monk fruit instead of honey.
