Bourbon Peach BBQ Chicken

A delightful fusion of Southern BBQ charm featuring juicy chicken thighs grilled with a sweet bourbon peach glaze, perfect for summer gatherings.

Ingredients

  • 6 chicken thighs (boneless, skin on or off)
  • 3 peaches (cored, quartered)
  • 1 peach (skin off, cored, diced)
  • 1 tsp sugar
  • 1/2 cup barbeque sauce
  • 3 tbsp bourbon
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Mix the ingredients for the spice rub and coat the chicken evenly.
  2. Bring one diced peach and sugar to a boil in a saucepan, then simmer for 5 minutes.
  3. Add the barbeque sauce and bourbon to the saucepan and simmer for another 5 minutes.
  4. Puree the sauce with an immersion blender or regular blender and set aside.
  5. Preheat the grill on medium-high heat.
  6. Grill the chicken for 3-5 minutes on each side.
  7. Brush bourbon peach BBQ sauce on the chicken and cook for 1 minute on each side.
  8. Repeat with one more coating of bourbon peach BBQ sauce.
  9. Check that the chicken is fully cooked when it reaches 165°F.
  10. Brush the remaining peaches with bourbon peach BBQ sauce while the chicken is resting.
  11. Grill the peaches for 1-2 minutes on each side.
  12. Serve immediately with extra sauce on the side.

Notes

For best results, use ripe, fresh peaches. Avoid overcooking the chicken to keep it juicy.
