  • 1/3 cup granulated sugar
  • 2 teaspoon instant yeast
  • 3/4 teaspoon fine sea salt
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • Tangzhong from above
  • 4 tablespoons unsalted butter (softened)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup light brown sugar
  • 2 teaspoons cinnamon
  • 1 cup candied bacon strips
  • 4 tablespoons unsalted butter (room temperature)
  • 2 oz cream cheese (room temperature)
  • 3/4 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1/21 teaspoon bourbon
  • 1/2 cup candied bacon strips (for the tops)

Instructions

  1. Prepare the Candied Bacon.
  2. Cook the bacon in a skillet over medium heat until crispy.
  3. Remove the bacon and drain on paper towels.
  4. Sprinkle brown sugar over the bacon while it’s still warm.
  5. Drizzle with maple syrup and bourbon, then add cracked black pepper.
  6. Bake in the oven at 350°F (175°C) until the bacon is caramelized, about 10-15 minutes.
  7. Cool to room temperature, then chop into bite-size pieces.
  8. Make the Cinnamon Roll Dough.
  9. Whisk together the all-purpose flour (3 1/2 cups), granulated sugar, instant yeast, and fine sea salt in a large bowl.
  10. Warm the whole milk until it’s just above room temperature.
  11. Combine the warm milk, egg, and Tangzhong into the flour mixture.
  12. Knead until the dough is soft and elastic, about 5-7 minutes.
  13. Incorporate the softened butter and knead until fully combined.
  14. Cover and allow the dough to rise until it has doubled in size, about 1 hour.
  15. Roll out the dough on a lightly floured surface into a rectangle.
  16. Spread 4 tablespoons unsalted butter over the dough.
  17. Sprinkle brown sugar, cinnamon, and candied bacon strips evenly across the surface.
  18. Roll the dough tightly into a log, sealing the edges.
  19. Slice the roll into 12 equal pieces and place them in a greased baking dish.
  20. Cover and let them rise for an additional 30-45 minutes.
  21. Preheat your oven to 375°F (190°C).
  22. Bake the rolls for 25-30 minutes or until golden brown.
  23. Make the frosting.
  24. Blend together cream cheese, powdered sugar, maple syrup, and bourbon until smooth.
  25. Spread the frosting generously over the warm rolls.
  26. Top with remaining candied bacon strips.

Notes

For best results, measure flour accurately and ensure the egg and milk are at room temperature for better dough consistency.
