A delightful mix of fresh blueberries, creamy goat cheese, and crunchy walnuts, served on a bed of mixed greens with balsamic vinaigrette. Perfect for summer!

Ingredients

  • 2 cups mixed greens
  • 1 cup fresh blueberries
  • 4 oz goat cheese, crumbled
  • 1/4 cup walnuts or pecans, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Combine in a large bowl the mixed greens, blueberries, goat cheese, and walnuts.
  2. Add the sliced red onion.
  3. Drizzle with balsamic vinaigrette and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Serve immediately.
