  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Whisk in a bowl together flour, eggs, milk, melted butter, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  3. Pour about 1/4 cup of the batter into the skillet, tilting to spread it evenly.
  4. Cook for 1-2 minutes until the edges lift and the surface is set, then flip and cook for another minute.
  5. Mix in another bowl cream cheese, powdered sugar, blueberries, and vanilla until combined.
  6. Place a spoonful of the cream cheese mixture on each crepe, fold it, and serve warm.

Notes

Chill the batter for smoother crepes and avoid overmixing to prevent toughness.
