  • 1/2 cup coconut sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup blueberries (fresh or frozen)
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together oats, whole wheat flour, coconut sugar, baking powder, and salt in a bowl.
  3. Add the applesauce, lemon juice, and lemon zest to the dry ingredients and mix until combined.
  4. Gently fold in the blueberries.
  5. Scoop tablespoon-sized amounts of dough onto the baking sheet and flatten them slightly.
