A delicious twist on the classic French dessert, this Blueberry Cherry Clafoutis combines fresh fruits in a creamy, custard-like base for a delightful treat.

  • 2 cups fresh blueberries
  • 2 cups fresh cherries, pitted
  • 4 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with butter.
  2. Whisk together the eggs, milk, sugar, vanilla extract, and salt in a bowl until well combined.
  3. Gradually whisk in the flour until the batter is smooth.
  4. Pour half of the batter into the prepared baking dish.
  5. Evenly distribute the blueberries and cherries over the batter.
  6. Pour the remaining batter over the fruits.
  7. Bake for about 35-40 minutes or until the clafoutis is puffed and golden brown.
  8. Let it cool slightly, then serve warm or at room temperature.
