A delightful summer dish featuring creamy burrata cheese paired with tangy, pickled blueberries.

Ingredients

  • 8 oz burrata cheese
  • 1 cup fresh blueberries
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Fresh basil leaves (for garnish)
  • Cracked black pepper (to taste)
  • Olive oil (for drizzling)

Instructions

  1. Combine apple cider vinegar, water, sugar, and salt in a small saucepan. Bring to a simmer over medium heat and stir until the sugar dissolves.
  2. Remove from heat and let cool slightly.
  3. Place the blueberries in a jar and pour the vinegar mixture over them. Let sit for at least 30 minutes to pickle.
  4. On a serving plate, place the burrata cheese and gently slice it open to reveal the creamy center.
  5. Top with pickled blueberries, fresh basil leaves, and cracked black pepper.
  6. Drizzle with olive oil before serving.

Notes

For sugar concerns, consider using stevia or monk fruit as alternatives. Serve burrata at room temperature for best texture.
