A comforting dish that combines crispy bacon, tender chicken, fresh lettuce, and tomatoes, swirled with luscious coconut cream.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 strips of bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, chopped
  • 1/2 cup coconut cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and crumble when cool.
  2. Add olive oil to the same skillet, then cook the chicken breasts until golden brown and fully cooked, about 6-7 minutes per side. Season with salt and pepper.
  3. Add minced garlic to the skillet and sauté for 1 minute.
  4. Stir in coconut cream and halved cherry tomatoes, cooking for an additional 3-4 minutes until heated through.
  5. Remove from heat and stir in crumbled bacon and chopped lettuce.
  6. Serve warm.

Notes

For extra crispiness, cook bacon in batches. Let the chicken rest after cooking for juicier meat.
