A refreshing no-bake dessert layered with mixed berries and creamy mascarpone, perfect for summer gatherings.

Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package graham crackers
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Whip the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract in a mixing bowl until soft peaks form.
  2. Layer graham crackers at the bottom of a baking dish.
  3. Spread a layer of the whipped cream mixture over the graham crackers, then add a layer of mixed berries.
  4. Repeat the layers until you’ve used up all the ingredients, finishing with the whipped cream on top.
  5. Refrigerate for at least 240 minutes or overnight to allow it to set.
  6. Serve chilled, garnished with fresh mint leaves if desired.
