  • 2 tablespoons olive oil
  • 2-3 tablespoons water (as needed)

Instructions

  1. Prepare the cooked beets by dicing them into smaller pieces for easier blending.

  3. Blend the mixture on high speed until smooth, pausing to scrape down the sides as needed.
  4. Drizzle in the olive oil while the processor is running to ensure it incorporates well into the hummus.
  5. Adjust the consistency by adding water, one tablespoon at a time, until you reach your desired thickness.
  6. Taste and adjust seasoning if necessary—more salt, garlic, or lemon juice can elevate the flavors.
  7. Serve the beet hummus in a bowl, drizzling a touch of olive oil on top, and sprinkle with fresh herbs or seeds for added flair.
