A delightful and nutritious dish combining sweet potatoes with shredded chicken and barbecue sauce, perfect for family dinners or casual gatherings.

  • 2 large sweet potatoes
  • 2 cups cooked shredded chicken
  • 1 cup barbecue sauce
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them with a fork.
  3. Bake in the oven for about 45-60 minutes until tender, or cook in an air fryer for about 25 minutes, or use the Instant Pot according to manufacturer’s instructions.
  4. Mix in a bowl the shredded chicken with barbecue sauce, salt, and pepper.
  5. Let the sweet potatoes cool slightly, then cut them open lengthwise and fluff the insides with a fork.
  6. Spoon the BBQ chicken mixture into the sweet potatoes.
  7. Top with green onions and cheese if desired.
  8. Serve warm.

Consider adding corn, black beans, or jalapeños for added texture. Use quality shredded rotisserie chicken for the best flavor.
