  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded cheese (cheddar or your choice)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook brown rice according to package instructions.
  2. Shred cooked chicken breast using two forks or by hand.
  3. Combine shredded chicken with BBQ sauce in a medium bowl, ensuring the chicken is well coated.
  4. Prepare your serving bowls by placing a base of brown rice at the bottom of each one.
  5. Layer the BBQ chicken over the rice in each bowl.
  6. Add black beans, corn, diced red bell pepper, and cherry tomatoes on top of the chicken.
  7. Slice avocado and place it onto each bowl.
  8. Sprinkle shredded cheese generously over the top.
  9. Garnish with fresh cilantro.
  10. Serve with lime wedges on the side for an extra zing.
