A healthy and delicious snack recipe made with sweet potatoes and zucchini.

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium zucchini, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the sweet potatoes until tender, then drain and mash.
  3. In a large bowl, combine the mashed sweet potatoes, grated zucchini, breadcrumbs, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper.
  4. Mix until well combined.
  5. Form the mixture into small tots and place them on a baking sheet lined with parchment paper.
  6. Spray the tots lightly with olive oil.
  7. Bake for 20-25 minutes or until golden brown, flipping halfway through.
  8. Let cool slightly before serving.

Notes

  • For a vegan version, substitute the egg with a flax egg.
  • Feel free to add herbs or spices to customize the flavor.
  • These tots can be frozen before baking for a quick snack later.
