A comforting and delicious baked fish recipe featuring a crispy Parmesan breadcrumb crust that warms the heart and fills the belly.

Ingredients

  • 2 4-5 oz cod fillets
  • 2 tbsp salted butter, melted
  • 1/3 cup Panko breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tsp garlic powder
  • 1 tsp lemon zest
  • Olive oil or cooking spray
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Combine Panko breadcrumbs, grated parmesan, parsley, garlic powder, lemon zest, salt, and pepper in a medium mixing bowl.
  3. Place cod fillets in a baking dish and pour melted butter over them, coating evenly.
  4. Coat each fillet in the breadcrumb mixture, pressing gently to adhere.
  5. Drizzle with olive oil or spray cooking spray on top.
  6. Bake in the preheated oven for 10-12 minutes.
  7. Broil on high for 2 minutes to achieve a golden crust.
  8. Serve with fresh lemon wedges.

Notes

For a gluten-free version, use gluten-free Panko breadcrumbs.
