A delightful Mediterranean-inspired dish featuring creamy feta, eggs, and vibrant vegetables, perfect for brunch or a cozy breakfast.

Ingredients

  • 1 block Feta cheese
  • 4 large Eggs
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes
  • 2 cups Spinach
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place a block of feta cheese in the center of a baking dish. Surround it with cherry tomatoes and spinach.
  3. Drizzle olive oil over the ingredients and season with salt and pepper.
  4. Bake in the oven for about 20 minutes, until the feta is soft and the tomatoes are bursting.
  5. Remove from oven and crack the eggs over the feta and vegetables.
  6. Return to the oven and bake for an additional 10-12 minutes, until the eggs are cooked to your liking.
  7. Garnish with fresh herbs if desired and serve immediately.

Notes

For a creamier texture, use high-quality feta cheese. Experiment with extra veggies for added flavor.
