A delightful and nutritious avocado toast topped with poached eggs and smoked salmon, perfect for brunch or a quick breakfast.

  • 2 slices sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • 80 g smoked salmon
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Chili flakes (optional)
  • Butter (optional, for toasting)

Instructions

  1. Toast the bread until golden and crisp. You can use a toaster or a pan with a little butter for extra flavor.
  2. Prepare your poached eggs and set them aside carefully.
  3. Cut the avocado, scoop it into a plate, and mash to your preferred texture. Add salt, pepper, chili flakes (optional), and a squeeze of lemon juice. Mix and taste.
  4. Spread the avocado mixture onto the toast.
  5. Layer smoked salmon on top, letting it fold naturally.
  6. Drizzle with olive oil and add a little more seasoning if needed.
  7. Gently place the poached egg on top.
  8. Break the yolk just before eating and enjoy immediately.

Notes

Best enjoyed fresh, but leftovers can be stored in airtight containers. Avoid freezing as avocado and poached eggs do not freeze well.
