Delicious and visually stunning appetizers featuring creamy goat cheese, ripe avocado, and crunchy cucumber.

Ingredients

  • 2 ounces fresh goat cheese
  • 1 ripe medium avocado
  • Dash of Tabasco sauce
  • 1 teaspoon lemon juice (or more to taste)
  • Pinch of salt
  • 1 1/2 medium English cucumbers, cut into 1 1/2 inch slices
  • 1-2 sundried tomatoes or roasted red peppers, chopped finely
  • Parsley for garnish

Instructions

  1. Mash the ripe avocado and fresh goat cheese together in a medium-size bowl until smooth.
  2. Add a dash of Tabasco, lemon juice, and salt, mixing well to combine. Adjust seasoning as needed.
  3. Wash and slice the cucumbers into approximately 15 pieces, each about 1 1/2 inches thick.
  4. Place the avocado and goat cheese mixture onto each cucumber slice using a spoon or piping bag.
  5. Top with a piece of sundried tomato or roasted red pepper.
  6. Garnish with a sprig of parsley.
  7. Serve immediately.

Notes

Choose ripe avocados for the best flavor and creaminess. You can prepare the filling in advance and assemble just before serving.
