Asparagus and Tofu Stir Fry

A quick and wholesome stir fry featuring vibrant asparagus and crispy tofu, perfect for busy weeknights.

Ingredients

  • 350 g block of tofu
  • 1 heaped tbsp cornflour
  • 200 g asparagus
  • 3 large cloves garlic
  • 1 thumb-sized piece of ginger
  • 2 tbsp sesame oil
  • 1 tbsp tamari (or soy sauce)
  • 1 tbsp chilli crisp oil (or 1 tsp chilli flakes)

Instructions

  1. Drain and cube the tofu block and toss in the cornflour.
  2. Fry in a non-stick pan with a drizzle of sesame oil until crisp.
  3. Prepare the marinade by mincing the garlic and ginger and mixing them with oil and tamari in a bowl.
  4. Add the marinade to the pan once the tofu is crispy and continue to fry on medium heat.
  5. Chop the asparagus and add it to the pan.
  6. Fry for a further 2-3 minutes until the asparagus is tender but crisp.
  7. Serve and drizzle the chilli crisp oil over the top.

Notes

For better flavor, marinate the tofu for a few minutes before cooking. Use fresh vegetables for optimal taste and nutrient retention.
