Deliciously soft and chewy cookies infused with the warm flavors of apple cider, cinnamon, and nutmeg, perfect for autumn gatherings.

  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 1-2 tbsp apple cider (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars until light and fluffy.
  3. Add egg, vanilla, and apple cider; mix until smooth.
  4. Whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Add dry ingredients to wet and mix until combined.
  6. Fold in diced apples gently with a spatula.
  7. Scoop dough onto baking sheet and bake for 10-12 minutes.
  8. Let cookies cool, then drizzle with apple cider glaze.

Notes

For a thicker glaze, add more powdered sugar. Store cookies in an airtight container for up to 5 days.
