  • ½ cup unsalted butter
  • 1½ cup heavy cream
  • 2 tablespoons Cajun seasoning
  • ½ teaspoon kosher salt
  • 1¾ cup freshly grated parmesan cheese
  • 1 lemon (zest only)
  • 3 tablespoons smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 teaspoons kosher salt
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • ½ teaspoon dried basil

Instructions

  1. Melt the butter in a large skillet over low heat until melted and it begins to froth.
  2. Stir in the heavy cream and Cajun seasoning.
  3. Add salt if needed.
  4. Bring to a simmer and cook on low for 5 to 6 minutes.
  5. Remove the pan from the heat, and add the lemon zest.
  6. Gradually add the cheese and stir until the parmesan is completely melted and the sauce is smooth.
  7. Salt to taste.
  8. Add pasta to the pan and toss to coat or serve as desired.

Notes

Use freshly grated parmesan for the best flavor and texture. Refrigerate leftovers for up to 4 days.
