A quick and flavorful recipe for shrimp fajita tacos made in an air fryer, perfect for busy weeknights.

  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons fajita seasoning
  • 8 small tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lime wedges and cilantro for serving

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Combine shrimp, bell pepper, onion, olive oil, fajita seasoning, salt, and pepper in a bowl. Toss to coat well.
  3. Place the mixture in the air fryer basket in a single layer.
  4. Cook for about 8-10 minutes, shaking the basket halfway through, until shrimp are cooked through and vegetables are tender.
  5. Warm the tortillas in the air fryer or on a skillet.
  6. Fill the tortillas with the shrimp and vegetable mixture.
  7. Serve with lime wedges and cilantro.

Notes

Store leftovers in an airtight container for up to 2 days. Can freeze shrimp and vegetables before cooking for up to 3 months. Best served fresh.
