White Bean Dip

A creamy and flavorful white bean dip made with fresh herbs and garlic, perfect for gatherings and healthy snacking.

Ingredients

  • 3 cups white beans, cooked and rinsed (2 15-ounce cans)
  • ½ cup chopped parsley (packed)
  • ⅓ cup chopped chives (packed)
  • 2 garlic cloves
  • ¼ cup extra virgin olive oil
  • Juice of ½ lemon
  • 12 tsp lemon zest
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp onion powder (optional)
  • 2 tsp fresh rosemary (optional)
  • A handful of roasted walnuts (optional)

Instructions

  1. In a food processor or blender, add all of the ingredients, starting with smaller amounts of lemon juice, lemon zest, and rosemary. Puree for 1-2 minutes, scraping down the sides as needed.
  2. For a dip with more texture, blend for 30 seconds; for a smoother dip, blend longer.
  3. If using walnuts, add them and pulse a few times until incorporated, but do not fully blend.
  4. Taste and adjust flavors as needed with more salt, lemon juice, or garlic.
  5. Enjoy immediately or refrigerate for 1-2 hours to thicken. Serve with pita chips, crackers, or vegetables.
  6. Store in a covered container in the refrigerator for up to 5 days.

Notes

Chill before serving for the best flavor. This dip can be frozen for up to 3 months.
