  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup honey
  • 3 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the ground walnuts, almond flour, coconut sugar, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk together the eggs, honey, and applesauce until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into a greased 9-inch round cake pan.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
