Veggie Omelet Casserole

A hearty, baked egg dish filled with sautéed vegetables, cheese, and milk, perfect for brunch or family gatherings.

  • 6 large eggs
  • 1 cup of milk
  • 1 cup of diced bell peppers
  • 1 cup of chopped spinach
  • 1 cup of diced tomatoes
  • 1/2 cup of grated cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 teaspoon of olive oil
  • 1/2 cup of diced onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. In a skillet, heat olive oil over medium heat. Add the onions and bell peppers, and sauté until softened (about 5 minutes).
  4. Stir in the spinach and tomatoes, cooking until the spinach is wilted.
  5. Add the sautéed vegetables to the egg mixture, along with the grated cheese, salt, and pepper.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. Bake for 25-30 minutes, or until the casserole is set and lightly golden on top.
  8. Let it cool for a few minutes before slicing and serving.

Notes

This dish can easily be customized with different vegetables or cheeses based on personal preference.
