A simple and tasty recipe for vegetarian quesadillas that are perfect for a meatless meal.

Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and bell pepper, sauté until softened.
  3. Stir in black beans, corn, cumin, salt, and pepper; cook for 2-3 minutes.
  4. Place a tortilla in the skillet, sprinkle half with cheese, and add the vegetable mixture on top.
  5. Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • Feel free to add other vegetables like spinach or mushrooms.
