  • 8 oz lo mein noodles
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (or vegetarian alternative)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Cook the lo mein noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the garlic and sauté for about 30 seconds until fragrant.
  4. Add the bell peppers, carrots, broccoli, and snap peas. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  5. Add the cooked lo mein noodles to the skillet.
  6. Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together until well combined.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

Notes

  • Feel free to add any other vegetables you like.
  • For a spicier version, add some chili sauce or red pepper flakes.
  • This dish can be made vegan by using a vegetarian oyster sauce.
