  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 cup vegan white chocolate chips
  • 1/2 teaspoon peppermint extract
  • Crushed peppermint candies for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the solid coconut oil and brown sugar until smooth.
  3. Add the almond milk and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the vegan white chocolate chips and peppermint extract.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Sprinkle crushed peppermint candies on top of each cookie.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
