A delicious and healthy vegan dip made with spinach and artichokes, perfect for parties or as a snack.

Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup cashews, soaked for 2 hours
  • 1/4 cup nutritional yeast
  • 1/4 cup almond milk
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine soaked cashews, nutritional yeast, almond milk, garlic, lemon juice, salt, and pepper. Blend until smooth.
  3. In a mixing bowl, combine the blended mixture with chopped spinach and artichokes.
  4. Transfer the mixture to a baking dish and spread it evenly.
  5. Bake for 20-25 minutes, or until the dip is hot and bubbly.
  6. Serve warm with tortilla chips or fresh vegetables.
