- 1 cup dates, pitted
- 1 cup almonds
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1/2 cup coconut oil, melted
- 1 cup dark chocolate, chopped
- 1/4 cup coconut milk
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Preheat the oven to 350°F (175°C).
- In a food processor, blend the dates and almonds until a sticky mixture forms.
- Press the mixture into the bottom of a tart pan to form the crust.
- In a bowl, mix peanut butter, maple syrup, melted coconut oil, and a pinch of salt until smooth.
- Spread the peanut butter mixture over the crust evenly.
- In a saucepan, melt the dark chocolate with coconut milk over low heat, stirring until smooth.
- Pour the chocolate over the peanut butter layer and spread evenly.
- Refrigerate for at least 2 hours to set.
- Once set, slice and serve chilled.
Notes
- For a nut-free version, substitute almonds with sunflower seeds.
- Store leftovers in the refrigerator for up to a week.
