  • 4 ripe peaches, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, coconut oil, maple syrup, and salt until a dough forms.
  3. Press the dough into a tart pan evenly across the bottom and up the sides.
  4. In another bowl, combine the sliced peaches, cornstarch, lemon juice, and vanilla extract.
  5. Pour the peach mixture into the prepared tart crust.
  6. Bake for 30-35 minutes or until the crust is golden and the peaches are tender.
  7. Let it cool before serving.
