Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon turmeric (for color)
  • 1/4 teaspoon salt
  • 1/4 cup cornstarch
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup to form the crust.
  3. Press the mixture into the bottom of a lined baking dish.
  4. Bake the crust for 10-12 minutes until lightly golden.
  5. In another bowl, whisk together lemon juice, lemon zest, turmeric, salt, cornstarch, and water until smooth.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20-25 minutes until set.
  8. Allow to cool completely before slicing into bars.

Notes

  • For a sweeter taste, adjust the maple syrup to your preference.
  • Store leftovers in the refrigerator for up to a week.
  • These bars can be frozen for longer storage.
