Delightful and nutty cookies made with almond flour and sweetened with maple syrup, perfect for gluten-free and vegan diets.

Ingredients

  • 1 cup almond flour
  • 1/2 cup pistachios, chopped
  • 1/4 cup maple syrup or agave syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, baking soda, and salt.
  3. In another bowl, mix the melted coconut oil, maple syrup, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry ingredients and stir until a dough forms.
  5. Fold in the chopped pistachios.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are slightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For lower sugar options, consider using sugar substitutes like stevia or monk fruit.
