  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, blend the pistachios until finely chopped.
  3. In a mixing bowl, combine the almond flour, chopped pistachios, baking soda, and salt.
  4. In another bowl, mix the maple syrup, melted coconut oil, and vanilla extract.
  5. Combine the wet and dry ingredients until a dough forms.
  6. Form small balls of dough and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly with your hand.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let cool before serving.
